We love cooking with lamb here. 

They are fantastic in a vindaloo, perfect as meatballs, and the lamb chops air fry beautifully. However, when we peel back the layers, we cook lamb lollipops for a fast and healthy dinner.

What cut of meat are lamb lollipops? 

Lamb lollipops are a cut of meat taken from the hind leg of the lamb. They are made by separating the bone from the meat and trimming and shaping it into a lollipop shape. 

Like lamb chops, lamb lollipops have a lower fat content than other cuts of lamb, such as the rib or the shoulder.

We regularly cook with this cut of lamb because it’s:

  • Quick and easy. Barely any prep is needed, and the seasoning is simple.
  • Foolproof recipe. This is a simple recipe if you’ve been reluctant to cook lamb.
  • Versatile. Lamb lollipops can be served as an appetizer or as a main course, and they pair well with a variety of side dishes.

What I love the most about these lamb lollipops is their impressive texture: tender, succulent, and melts in your mouth. 

Ingredients needed 

Besides the lamb and some seasonings, there isn’t much else in this recipe. Here is what you’ll need: 

  • Lamb cutlets. Use French lamb cutlets, which are taken from the loin and rib area of the animal. They are about ½ inch thick and have a delicate and tender texture. 
  • Salt and pepper. To season. 
  • Butter. Melted. 
  • Garlic powder. To taste. 
  • Lemon juice. For a tangy flavor. 
  • Parsely. Chopped.

Cooking lollipop lamb chops takes less than 10 minutes from prep to plate. Ready to cook some up?

Step 1- Prep the pan and season the lamb lollipops 

Preheat the chargrill pan to high. Season both sides of the lamb with salt and pepper.

Step 2- Grill the lamb lollipops

Cook on the preheated pan and chargrill both sides until cooked.

Step 3- Prepare the butter

Mix melted butter, lemon juice, garlic powder, and a pinch of parsley in a bowl.

Step 4- Coat with butter mixture and serve! 

Brush the butter mixture on the lamb and garnish with some extra parsley. Serve it with sliced lemons.

Ideal temperature for cooked lamb

The best way to know when lamb lollipops are done is by checking the internal temperature, which differs depending on the level of doneness you want. Depending upon that, the temperature for various levels of doneness is given below: 

  • Rare: 125F
  • Medium rare: 130-135F
  • Medium: 135-140F
  • Medium well done: 145F
  • Well done: 150F and above

Tips to make the best recipe 

  • Marinate the lamb for at least an hour, or even overnight, to give it maximum flavor.
  • Avoid overcooking the lamb. They are best when cooked to medium-rare or medium.
  • Let the lamb lollipop chops rest for a few minutes before serving to allow the juices to redistribute.

What to serve with this dish

For a well-balanced and healthy meal, serve the lamb lollipops as the protein component paired with some vegetables or something around potatoes, like a German potato salad or Japanese potato salad

You can also remove the meat from the bones and add it to a spicy sandwich or serve them over a rice salad or orzo salad

To enhance the flavor, here are some flavor variations that you can try:

  • Cook using different cooking methods. Different cooking methods can also change the flavor of the lamb. Grilling will give them a smoky flavor, while roasting will give them a more savory taste.
  • Marinate with sauces. Change things by dredging the lamb in fun sauces, like bulgogi or katsu

Storage instructions

To store. In an airtight container, you can store the lamb in the refrigerator for up to 3 days. 

To freeze. They can be frozen in a freezer-safe bag or container for up to 3 months.

Reheating. You can reheat them in the microwave or pan until thoroughly warm.

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter melted

Instructions
