If you are someone who often buys protein treats which cost a pretty penny, be prepared to save money AND macronutrients- These Copycat Complete Cookies are your answer!

Over a year ago, I promised to share every single Lenny & Larry’s Complete Cookies given a homemade makeover! I’m sticking true to my promise, although a little bit late. I did share the birthday cake protein cookies, double chocolate protein cookies, and white chocolate and macadamia but the rest? They kind of fell by the wayside!

Lenny & Larry’s Complete Cookies are often referred to as the best tasting protein cookies, however, they do have some downfalls. Firstly, their serving size of two per cookie makes it difficult for consumers to enjoy in one go. Secondly, their nutritional profile is similar to many store-bought cookies, healthy or not. Their ingredient list is also extensive and filled with several unpronounceable ingredients. Finally, the price per cookie is definitely costly, so I’m here to rectify it! 

I’ve revamped the recipes, re-tested them to give them an even better nutritional profile while using minimal ingredients! The base recipe (which works for every single cookie) needs just five ingredients, and depending on which cookie you choose to make, the maximum ingredients needed is no more than seven!

The five key ingredients are coconut flour, a sticky sweetener, a liquid of choice, a nut or seed butter, and of course, the protein powder.

The perfect coconut flour

Coconut flour is an ingredient I use very often here and is becoming a seemingly more popular grain-free baking blend. Consumers are becoming more confident with using it, and more brands and varieties are popping up on the market. 

The downside of coconut flour is that no brand is created equal and each yield different results. I stick to two kinds of coconut flour- This one which is often found in most supermarkets and this one which is my go-to item from Trader Joe’s. Ever recipe I share on here which calls for coconut flour exclusively use these two brands. If you use a different brand, be wary of the amount of liquid you add at the end, as it may be a little more or less. 

The Sticky Sweetener

The sticky sweetener is completely up to you, but I prefer using maple syrup, as it is the least prominent tasting. I’ve also tried this with a monk fruit sweetened maple syrup, which is perfect if you want the cookies to be completely sugar free. If you’d like to use honey or agave, those will work fine, but honey is quite overpowering. 

The Nut or Seed Butter

Whether you tolerate nuts or have a nut allergy, you’ll be covered, as this ingredient is forgiving and has options! For the base recipe, I stuck to cashew butter, as it is mild tasting and doesn’t overpower any of the cookies. Alternatives would be almond butter, peanut butter, sunflower seed butter and soy nut butter. If you choose to use peanut butter, it will be overpowering and the flavor will be very evident- Just be wary!

The Protein Powder

Like coconut flour, no protein powder is created equal and some can convert a delicious cookie into a hockey puck! I tried it out with several different brands and types and have a few options to share!

Firstly, make sure you enjoy the taste of your protein powder, otherwise, your cookie will be inedible. Secondly, whey protein powder (Strict whey protein powder) will not work, as it will make the cookies dry and the batter sticky. Saying that I did have success with one whey blend, which is this brand here in vanilla

Like many of my other protein packed recipes, I stick to my three tried and tested blends- This vanilla brown rice protein powder, this vanilla casein protein powder and for my paleo friends, this paleo blend. The brown rice protein has a little bit of an earthy taste but has the best final texture. The casein blend is incredibly thick, so you’ll be needing to add a considerable amount of liquid to achieve a cookie batter.

Let’s quickly talk about creating the perfect protein cookie, in both taste and texture. Because of the ingredients used, you need to be very careful when baking them. 

Timewise, they literally take less than 10 minutes to bake but are a little bit deceiving. When you remove them from the oven, they make look undercooked, but they firm up once cooled, similar to my flourless cookies

Texture wise, the cookies are similar to shortbread- Firm and seemingly crumbly on the outside, but delicious, slightly dense and soft in the center. 

HACK! To ensure perfect texture for each cookie, consider adding  1/4 teaspoon of coconut oil to the batter. While it may seem very minor, this really enhances the cookie and gives it an even buttery texture!

Since developing and making these cookies, my friends who used to enjoy complete cookies on the odd occasion have now made them part of their daily and weekly meal plans! As someone who has started working out (semi) regularly again, I’ve been enjoying them as a post-workout snack or pre-workout energy boost!

Heck, they even make a clean eating and guilt-free dessert- They taste amazing crumbled over this protein ice cream, this brownie batter ice cream and even dipped into a thick and creamy smoothie

A copycat recipe of Lenny & Larry’s Complete Cookies with much better macronutrients and under five ingredients each- All ten flavors! Protein packed, single serve cookies which are all vegan, gluten free, sugar free and most with a paleo option!

Ingredients  

Instructions 

  • Preheat the oven to 180C/350F and line a small baking tray with parchment paper and set aside.
  • In a small mixing bowl, add your dry ingredients and mix well. Add your wet ingredients (and any customizable add-ins) and mix very well, until a crumbly texture remains. Using a tablespoon, add liquid of choice until a thick batter is formed. 
  • Form two small balls and press cookies onto the lined cookie sheet or baking tray. Top with any customizable add-ins and bake for 8-10 minutes, until cookie looks just cooked and still soft. Remove from oven and allow to cool completely. 
  • Enjoy immediately or save for later!

Notes

* Depending on what brand of ingredients you use, you’ll likely need more than the recommended amount. Adjust accordingly.

Cookies can be kept at room temperature, covered. They are also freezer friendly too.

  6. Oh my gosh, SO EXCITED!!! The fact that one cookie was two servings felt like such a joke. I mean, if you put a cookie in front of me, I darn well am gonna eat the whole cookie, haha 😉 . I’m most pumped to try eating one of these warm and fresh baked. I only tried the Lenny & Larry’s cookie twice, but the second time I had it, I microwaved it and it was gooey goodness. Now I’ll get all the gooey goodness, but none of the unwanted ingredients 🙂 !

  7. Making these in just a few minutes!!! The two servings deal on Lenny and Larry’s has always bothered me, too, and I just like making my own stuff better, so I’m excited to try these! Plus, I love that they’re stable and won’t melt in the summer heat (a problem I have when taking no-bake protein bars to the gym).
