If you’ve made my 4 Ingredient flourless protein brownies before, you know just how quick and easy they are…not to mention delicious and completely guilt-free. I’ve taken these protein-rich brownies up a notch and added a super thick layer of healthy edible cookie dough on top– No raw flour, no eggs, and no baking required.

If there are two desserts which SHOULD be combined, it would be brownies and cookies. I remember at a market in London, trying a ‘junkyard brownie’– It was a fudgy, gooey brownie with chunks of actual cookie pieces in it.

Actually, I think I may try and make something like that. 

What I love about these healthy cookie dough protein brownies, is that is a taste and texture lovers dream.

Think about the brownie base– It’s gooey, fudgy, chocolate-y and needs just four ingredients. 

Now think about the cookie dough– Sweet, creamy, slightly firm but still soft and gooey. It also only needs a handful of ingredients, all of them healthy- You won’t see any butter, oil, white flour or sugar in this! Not only that, it’s totally suitable for those following a vegan, gluten free, paleo, sugar free and dairy free lifestyle!

It’s easy to assume that such a decadent looking recipe would be time-consuming, but I promise it is anything but. You’ll need less than 15 minutes for the brownies and while baking those, you can prep the edible eggless cookie dough frosting, needing less than 5 minutes!

These cookie dough protein brownies are healthy enough to enjoy as a post-workout snack, a pre-workout snack or even a clean eating dessert. How often do you eat gooey brownies you can feel good about eating?

For the flourless protein brownie base, you only need four ingredients- Pumpkin (or banana!), cocoa powder, a nut butter and protein powder. I want to preface this by saying the protein powder is NOT mandatory. In fact, this works just as well using my 3 Ingredient Flourless Brownies for them.

Any nut or seed butter works, but some are better than others. Smooth peanut butter or almond butter bake best, or sunflower seed butter for a nut-free option. Just be wary that peanut butter is a little more overpowering than the others.

As a dark chocolate lover, I always use dark cocoa powder. If you aren’t a fan of bitter tasting chocolate, use a good quality baking cocoa powder

If you don’t include the protein powder or prefer sweeter brownies, add some sweetener to it. This can be in the form of liquid stevia, pure maple syrup, or table sugar.

For the edible eggless cookie dough frosting, I barely adapted this recipe. The only changes I made was to increase the milk of choice until smooth and spreadable. If you want a fun twist, consider topping it with this edible unicorn cookie dough!

Not only are these quick and easy flourless cookie dough frosted protein brownies insanely delicious, they last ages! Whenever I make brownies or cookies, I always portion servings in the freezer. These beauties work well for that- They are perfect to enjoy at a later date or batch cook to snack on in school lunch boxes or after a tough workout. 

If you do choose to freeze them, do it two ways. Either freeze the entire recipe completely (protein brownie AND cookie dough frosting) or freeze the brownie base and refrigerate the cookie dough. Becuase the edible cookie dough is eggless (egg-free), it will last a significantly long time.

Healthy Flourless Protein Cookie Dough Brownies (Paleo, Vegan, Gluten Free) made for clean eating snacking or dessert. A thick, fudgy flourless protein brownie base with an edible eggless cookie dough topping!

Ingredients  

For the flourless protein brownie base

For the edible eggless cookie dough frosting

Instructions 

  • Preheat the oven the 350 Fahrenheit. Lightly grease an 8 x 8-inch pan or layer with parchment paper. Set aside. 
  • In a blender or large mixing bowl, add your brownie ingredients until combined. Pour batter into the pan and bake for 12-15 minutes, or until a toothpick comes out just clean. Allow to cool completely.
  • While brownies are cooking, prep your edible eggless cookie dough as instructed in the link. For a thicker frosting, coat as it is. For a thinner, creamy frosting, add milk of choice. 
  • Once brownies have cooled, top with cookie dough frosting and refrigerate until slightly firm. Slice into bars and enjoy!

Notes

Protein powder is completely optional- Feel free to omit completely. 
If flourless protein brownies are too gooey, refrigerate until firm. 
Healthy Flourless Protein Cookie Dough Brownies need to be kept refrigerated but are also freezer friendly.
