Niki- this one’s for you.

The day Niki got her license, we went out to celebrate with a good meal and movie. By good meal and movie, I mean Nandos chicken and chips and the second session of Harry Potter. Okay, so it was probably not so much a celebration than a bored Saturday night. I digress.

Niki was ‘celebrating’ finally obtaining her driver’s license.

I, however, was celebrating not being her chauffeur anymore.

It’s not that I didn’t enjoy driving THAT much- I actually don’t mind it. It was the little ‘gifts’ she would leave after every. Single. Trip.

Sometimes it was her lip gloss.

Sometimes it was a few coins (they became donations in my glove box).

Most of the time, it was empty bounty wrappers. Those infamous, shiny blue and white wrappers would be enrobed within my car seats, behind the seats and even occasionally in the boot. Don’t ask me how they got there. Niki had no excuses. Believe me, she tried.

She literally used every excuse in the book.

‘Its not mine, It’s moms.’ (Mum hates coconut)

It’s not mine, it’s Ingrid’s. (Ingrid prefers gummy candy. She also has had Invisalign treatment)

‘the wind blew it in.’ (How obscure- always the same chocolate….)

‘It’s not mine. It’s Christine’s. (…..Christine is diabetic)

Safe to say, Niki thought I was a twat but she was wrong. Sorry, Niki- it was all you.

When I was back in Melbourne, we went for a drive in her car and let’s just say there was no room for me to leave any ‘gifts’- I tried with a cookie wrapper from the airplane, a gum wrapper, and even a pen. Nope.

I could be all fancy schmancy and say that this recipe was created out of those ‘lovely’ car memories but that would be a lie. Because a recipe this good cannot be ascertained from that kind of memories.

Although a bounty bar typically is made of sugar, milk chocolate, coconut, sugar, and sucre (French for sugar), I took it upon myself to give it a healthy makeover without sacrificing on taste. Let’s chuck a challenge and make it paleo too. That means it makes the Vegans happy, the gluten intolerant happy and the grain free advocates happy.

The best bit? These are so easy to whip up and with just 4 ingredients– you’ve probably got them already in your pantry. They take less than five minutes to prep and are diet friendly- Seriously, you’ll never buy a packaged candy bar ever again!

Chocolate Coconut No Bake Bars

4 Ingredient No Bake Mound Bounty Bars (Paleo, Vegan, Gluten Free)

A copycat recipe of one of the most delicious candy and chocolate bars out there- The bounty or mound bar! This healthy 4 ingredient no bake mound bounty bars are naturally paleo, vegan, gluten-free, refined sugar free and low carb! 
Servings: 18 servings
Prep: 5 mins
Cook: 15 mins
Total: 20 mins

Ingredients  

Instructions 

  • Line a loaf pan or 8 x 8 baking dish with parchment paper and set aside. 
  • Add your shredded coconut in a large mixing bowl and set aside. In a microwave safe bowl or stovetop, melt your coconut oil. Pour over the shredded coconut and add the pure maple syrup. Mix very well. 
  • Pour the coconut mixture into the lined baking dish and refrigerate for an hour, or until firm. Once firm, melt your chocolate of choice and pour over the coconut bar. Refrigerate until chocolate has firmed up. Cut into bars and enjoy! 

Notes

4 Ingredient No Bake Mound Bounty Bars should be kept refrigerated but can be kept at room temperature, as long as they are covered. These are also freezer friendly.

  1. My father would love these, bountys are one of his favourite sweets. He seems to like coconut sweets, for Christmas we always have to make coconut macaroons for him (no complaints!).
    Since I’m the younger sister who had been carried around by her bestest big neither I should have been the one to leave behind gifts. But if course I didn’t do that. I’m a nice sister! (And I’m neat)

    1. I did, actually- A while back I made no bake double coconut rice crispy treats using peanut butter as the binder and a coconut peanut butter- it was awesome!

UK reader here, been planning with some friends a backpacking trip across Australia and New Zealand next year, nearly forgot they had no idea who you were and got all excited when we were planning on going to Melbourne, whoops 😛 hahah blog reading/stalking problems.

  9. Hehe its funny you said about Bounty, as here in America they are called Almond Joy! And actually, don’t hate me, but I am not that big of a fan, whenever we would get the celebrations box (you get those in Australia too right?), the bountys would always be the ones left! I love the idea of homemade ones though, yum!

  11. Ummm…these look delicious, Arman! I’ve been thinking about your post from the other day about trying different diets for a week at a time. It hit me this morning while I was working out that I want to be Cookie Monster for a week. Is that acceptable? I’ll even wear a furry, blue costume. And I totally think these bounty bars quality for a Cookie Monster diet. Just sayin’.

    1. Mate- i went through a stage recently where I posted cookies because I made single serve cookies and considered them breakfast. It was pretty awesome.
