Keto Rice Krispie Treats

When it comes to giving keto makeovers to classic desserts, I love making some oreo cookies, edible cookie dough, and these keto rice crispy treats. 

I’m always scouring the market for new keto products. I’ve loved incorporating keto bread and keto chips into my diet, so much that I ended up making my own. After a recent visit to the cereal aisle, I was floored to find a keto cereal! 

I’ve been meaning to make a keto-friendly rice cereal treat, especially after coming across several delicious low carb kinds of cereal. I was worried that the texture would be different, but I was pleasantly surprised- the cereal was sweet, crispy, and crunchy, and perfect to use in place of traditional crispy rice cereal.

Is Rice Krispies cereal keto? 

If you take a look at the ingredients on the box of rice crispy cereal, you’ll notice they are made of corn, maize, sugar, which are NOT keto friendly. 

Where there is some crispy cereal that is higher in protein, they still contain far too many net carbs and sugars to be keto.

Luckily, by simply replacing traditional crispy rice cereal with a protein cereal (that is keto friendly), you’ll enjoy all the classic flavor and texture of them! 

These keto rice crispy treats are sweet, crispy, crunchy, and slightly gooey in the middle. They are the BEST low carb version of the childhood classic, and remind me so much of marshmallow treats.

No marshmallows and no butter is needed, but you’d never tell. They are perfect to enjoy as a healthy dessert, or even a lunchbox snack. I brought a batch of these to a friend’s recent potluck party and NO ONE could tell the difference- They tasted exactly like the original, if not better!

Keto Rice Krispies

Ingredients to make keto Rice Krispies

  • Keto Cereal– A low carb crispy cereal, this protein cereal looks and tastes just like rice crispies. Any sugar free crispy cereal can be used. 
  • Peanut Butter– Smooth and drippy peanut butter, that is completely sugar free! See my tips below to keep it nut free or peanut free! 
  • Sugar Free Maple Syrup– Gives the Krispie treats extra sweetness and helps hold them together. I used monk fruit sweetened maple syrup, not sugar free pancake syrup. The latter will not hold up very well at all, as it doesn’t have the thick texture required. 
  • Coconut Oil– A little coconut oil is added to keep the treats intact and crispy. You can also use butter.

How do you make keto rice crispy treats?

Start by adding the peanut butter, syrup, and coconut oil in microwave safe bowl or small saucepan. Heat up until the coconut oil and melted and the peanut butter is warm. You’ll want to whisk it very well until a smooth, thick liquid remains. Now, pour this mixture over the keto cereal until completely all the cereal is covered.

Moving quickly, transfer the mixture into an 8 x 8-inch lined pan. Using a spatula, press the crispy treat mixture into the pan. Refrigerate for at least 2 hours, to firm up.

Can I make this without peanut butter? 

Yes, if you’d like this recipe to be nut free or peanut free, you can substitute it with either almond butter, sunflower seed butter, or tahini. Just be sure that they are sugar free, and smooth and drippy in texture. 

Tips to make the best low carb Rice Krispie treats

  • If you’d prefer thick and dense Rice Krispies Treats, add extra cereal than recommended.
  • Feel free to add some marshmallow extract, if you’d like these to have the authentic marshmallow flavor. 
  • Add a drizzle of sugar free chocolate over the bars for some extra chocolate flavor. 
  • When slicing the bars, pour hot water over the sharp knives to make it seamless and for the bars to remain intact. 

How to store sugar free Rice Krispie treats

  • To store: Crispy treats tend to become sticky and gooey when left at room temperature for too long. As such, it’s best for them to be stored in the refrigerator, covered. They will keep fresh for up to 2 weeks. Let the treats sit at room temperature for 30 minutes prior to enjoying it. 
  • To freeze: Place keto Krispie treats in a ziplock bag and store in the freezer for up to 6 months.

  • Line an 8 x 8-inch pan with parchment paper and grease generously. Set aside. Pour the cereal in a large mixing bowl.
  • In a microwave safe bowl or in a small saucepan, add the peanut butter, coconut oil, and syrup. Heat up or microwave until warm. Whisk together, to combine.
  • Pour the liquid mixture over the crispy cereal, and mix well, until combined. Transfer the mixture into the lined pan and press down using a rubber spatula.
  • Refrigerate the treats for at least an hour, to firm up.

* Any smooth nut or seed butter can be used. 
** Any crispy keto/low carb cereal can be used.
