I have no qualms what kind of diet you follow. Honestly.

Vegan? Cool.

Gluten Free? A-ok!

Grain Free? High 5!

Paleo? Gross. Just kidding.

That, however, was such a minuet aspect- it was her personality, interests and quirks which made her company enjoyable. Ever since connecting with her, whenever I recipe experiment, I always (within reason!) try and see if I can ‘Meridien’ it….or make it Paleo friendly.

During our meet-up we discussed many things, including tim tams (Aussie Pride!) and cookie dough (American Pride!). When I first made my Nut Butter Breakfast Cookie Dough, I knew I had to try to Paleo-fy and see if it got the tick of approval from the expert herself. Well….Let’s just say the Paleo version MAY be more favoured over the original version.

This Paleo Breakfast Cookie dough is so easy to whip up and tick many other dietary boxes too- Grain free, Vegan, Gluten free and naturally high protein option! This serving can be doubled, tripled or produced in mass quantities for easy grab and go snacking too.

Ready in under 10 minutes, these delicious and filling no bake balls will become standard on your breakfast rotation. Now to see what Meredien thinks….She better like it as I have a triple chocolate spiked version to share!

Paleo Breakfast Cookie Dough

Cookie dough for breakfast which is completely paleo, vegan and gluten free- and a healthy option anytime of the day!
Servings: 1

Ingredients  

  • 4 tablespoon coconut flour
  • 1 tablespoon cocoa powder
  • 1 tablespoon nut butter of choice I used cashew butter
  • 1 tablespoon chopped nuts of choice I used chopped cashews
  • 1 tsp+ coconut sugar please adjust to desired level of sweetness*
  • Pinch sea salt** Optional
  • 1/4-1/2 cup almond or coconut milk depending on brand of coconut flour used
  • 1 tablespoon shredded coconut

Instructions 

  • In a large mixing bowl, sift the coconut flour and cocoa powder to remove any clumps. Add in the coconut sugar and sea salt and mix well. Add in the nut butter and chopped nuts.
  • Add the milk, 1 tablespoon at a time until a 'dough' consistency is formed. Shape into bite sized balls and set aside.
  • Spread a plate with the shredded coconut and roll the balls in it to cover completely. Eat immediately or refrigerate for 30 minutes.

Notes

* I don't like these too sweet so kept it at 1 tsp of sugar. For a sweeter dough adjust accordingly.
** Sea salt brings out the sweetness- This is optional but recommended.
These are great to store in the freezer and simply remove 30 minutes before consumption. If making in batches, it's best tasting coming out of the fridge but can be kept at room temperature for up to 5 days.

  3. I like this! I will try a version of it with ground almonds instead of coconut flour (I don’t have that and don’t want to buy it 😉 ), with almond butter and chopped almonds then of course. I’ve never made such balls before!! I really have to give it a go!

    1. Hey, I’ve already made them!! I can’t believe it, haha. More often than not I say that I’m going to make a recipe but in the end actually don’t.
      I made them (as I mentioned) with ground almonds, almond butter and chopped almonds. However, they were a bit too salty for me at first so I added a bit more sweetener. I will post them tomorrow to my instagram account and tag you!! 🙂

        1. Hi! 🙂 As far as I remember I made the exact same recipe, but substituted the coconut flour with ground almonds/almond flour, chopped almonds for the chopped nuts, and almond butter as the nut butter. Hope that helps 🙂

  4. Ugh my city is famous for freaking Primanti’s Sandwiches … sandwiches with fries and coleslaw on top. Which could be good in theory but it’s so over-talked about here that I’m not enthused anymore. One thing I’m not over? Cookie dough. I used to sneak pieces of it from the freezer when I worked at the ice cream shop a few years ago. Good times :p I’m sure these bites are way healthier than the ones I had at work though lol

  5. YUM! All I need is coconut milk, shredded coconut, and coconut sugar and I can make these! These look so freaking good.
    I’ve made a Paleo Cupcake…but before that, I don’t know if I’ve ever eaten or made a sweet paleo treat. Paleo-Friendly desserts always look so tasty though.
    I don’t think Birmingham, AL is known for anything special, except that we’re in the South, so southern food (collard greens, cornbread, black eyed peas, fried chicken (bleh) and more fried things…and more.)
    I do like collard greens and black eyed peas though.

  6. I am not big on paleo treats mainly because the baking ingredients cost a lot, but I will do them occasionally especially if my kids can help me out with it since they love making treats. These look really interesting and super yummy, I’ll have to try!

    I keep finding we are making “paleo” evening meals – not intentional at all but it seems to happen.
    I met the little honey bee and her sister Lesley a few months ago. They are both so lovely and sweet!
    London is famous for everything stodge – pie and mash, fish and chips – such a healthy nation 😉

  9. Coconut flour is my favourite thing right now so i’m totally keen to try these! I made a paleo pumpkin pie a few weekends ago and it was actually really good. My town isn’t famous for any food, but a nearby town is the ‘beef capital of Australia’ and holds Beef Week every year, quite paleo friendly really.

  10. Yay totally totally totally gonna make these tomorrow 🙂 Sans sugar obviously but anyways, maybe I’ll sneak in a date or two.
    My area is indeed famous for food and even more for it’s beverages. Schnitzel, Sausages (though it’s deep-rooted predjudice that Germns eat sausages all the time), Pretzels (the only real pretzels btw) and of course diffrent sorts of beer.
    I’ve never met another blogger in real life but I would love to! We should totally go eat a head-sized Schnitzel then 🙂

    1. Hm….can you have honey or maple syrup or brown rice syrup? You could decrease the milk and add some of that? Otherwise definitely chop a date!

      WHEN we meet (which I promise you, will happen) we will be 1) dancing on tables 2) eating a tonne of meat. Pork knuckle!
