I teased you with this recipe on Wednesday and then after Niki’s rant on Thursday, I thought it was only fitting to share her favourite Paleo friendly recipe- How is that for irony!
So clearly Niki made it evident that the breakfast cookie dough was not a Lindt truffle. Well, duh. It was never stipulated to taste like a Lindt truffle, nor was it intending to emulate it. Well, neither is today’s recipe.
Growing up, Niki and I would always fight over the truffle chocolates in those assorted boxes. Actually, Niki would cry and get first choice. Being the smart nice brother I was, I’d always direct her to choosing the truffle which looked most delectable, but knowing it was clearly one of the gross ones- cherry (which tasted like cough syrup) or the one which had nothing but a giant hazelnut in it. How did I know this? Well, I would sneakily look under the box which gave a description of what each truffle would contain.
Anyway, back to the story. While Niki would cry again that she got a cough syrup flavoured truffle, I would quickly snatch the mint AND the caramel truffles- a.k.a. the good ones.
Then I’d get sent to my room or chased around the house with a wooden spoon.
Luckily, these truffles play fair and contain the same interior and exterior. Staying true to the paleo theme, they turned out like a delicious, healthy version of a truffle- one which would be perfectly acceptable as a snack any time of the day , or if you’re like me- bagging up 4 or 5 of them and calling it breakfast. True story. Just ask my snapchat buddies.
These truffles have the ideal combination of fiber, protein and healthy fats to keep you energised- Being Paleo friendly makes them grain free, vegan and gluten free- but labels are irrelevant if at the end of the day, the outcome is one thing- Delicious.
The only caveat- they taste pretty darn good, sibling fights would most likely ensue.

Paleo [chocolate covered] truffles
Ingredients
- 1 cup coconut flour sifted
- ½ teaspoon sea salt
- ½ cup honey
- ½ cup mild tasting nut butter I used almond butter
- 2 tablespoon chopped nuts try to use the same as the nut butter- I used chopped almonds
- ¾ cup almond milk
- Paleo Chocolate
- Sea salt to garnish
Instructions
- Line a large baking tray with baking paper and set aside.
- In a large mixing bowl, add the coconut flour, sea salt and chopped nuts.In a small microwave safe bowl, combine the honey and nut butter until melted together. Add the mixture in the dry and mix until well combined- the batter should be extremely crumbly.
- Slowly add the almond milk until it reaches a firm batter consistency. Using your hands, form into golf ball sized balls and set aside on a plate or tray.
- In a microwave safe bowl, melt the chocolate and using two forks, add each truffle one at a time until fully coated in the chocolate and set aside on lined baking paper. Sprinkle coarsely with sea salt and freeze for up to an hour or refrigerate for 2 hours.

Um if I’ve ever tried Lindt chocolate truffles?? 😀 last weekend I finished a whole box on my own. In one sitting 😉 they are delicious! I discarded those with alcohol but the other ones I totally enjoyed. The best ones are with nougat or caramel sauce. I love marzipan too but nothing beats real Niederegger marzipan!
A whole box? You are one smart truffle! MARZIPAN…..Ironically, when I was in Germany, I ate my friends Candy Christmas house and there was something so addictive about it- it was the Marzipan!
My grandmother used to go through boxes of chocolate and stick in her thumb in the bottom of each one to check what kind it was…then leave it in the box if she didn’t want it. Haha. Right now I’d pretty much kill for a Lindt Peanut Butter Chocolate Truffle. A craving which will surely subside once I’m back on US soil and actually have access to them…

Will almond flour work too? Coconut flour has a choking texture sometimes.

You betcha almond flour will work. That’s why I always sift coconut flour and mix it well with other flours/nuts.
I LOVE truffles!!! And I love that these are healthy. Win, win! I used to always like the Fannie May truffles that yellow on the outside and had the dark, creamy chocolate on the inside! Soooo good!!!
My siblings and I used to fight over water cup colors. Yes… Sounds pathetic. The red cup was coveted…. I always ended up with the yellow. Eventually my parents just had to give us assigned cup colors so we would stop fighting.

I used to break all of the chocolates opened in the box before eating them just to make sure there were no nuts or bad things inside that I wouldn’t like. I always loved the chocolate fudgy or creamy centers. Godiva truffles are my favorite.
OH MAN, I need Godiva truffles right about now.
And that is why I’m happy I am an only child ha ha! These truffles look amazing. Can I ask what the sifting of the coconut flour does?
Sure thing! Sifting coconut flour avoids the clumps it often forms when mixed with liquids or other flours- it also makes it way more fluffy/light!
Well if these don’t look just freaking delicious. I’m heading on vacation soon, and maaaay just have to make these for road trip snacks!
They hold really well- all my friends on snapchat have been receiving snaps of my breakfast- 6 of these in a bag. BOOM.
Truffles seem so fancy! But they usually don’t have nut butter, which is a shame. These allow me to be sophisticated and snobby with my truffles.
Just wait until the coming weeks when I post an epic truffle recipe- you’ll be snobby with it and like it.

I finally joined the club and bought coconut flour a couple days ago. So excited to test it out with this recipe. Although, mine won’t be paleo since I don’t have paleo chocolate…about to look up what makes it different btw.

Haha I couldn;t help but laugh at letting your sister have first pick..knowing she’d opt for the rank flavors! That’s the problem with assortment boxes- looks can be deceiving…so tragic every time I’d bite into a chocolate and find out it’s filled with orange or berry flavored liqueur..gross! My favorite was (and still is) the white chocolate pieces filled with hazelnut ganache! Even though I am not a big fan of white chocolate normally, this combo tastes heavenly!
You know I love this recipe- how can I not when it involves chocolate & nut butter! I will, however, probably bastardize it by using regular chocolate instead!
Haha, ahh how she learnt her lesson- don’t even get me started on the liqueur flavoured ones- poison probably tastes better! Go for using chocolate- I’ve made similar recipe using melted Lindt 90% and it was amazing.
LOVE the look of these, and once again, I know the recipe will go from bowl to spoon to mouth – ball formation will not happen!
After many a war in the Neligan household over the precious hazelnut Lindt truffles, I’ve had to accept that the best I can do is scoff the second best, the dark chocolate ones.

My sister and I used to fight over boxed chocolates all the time! It’s a little sad because I’m almost 7 years older than her – as my mom used to say, “I should have known better.” But really, it’s chocolate…there is no known better. LOL!
