Hands down, the most CHEWY and delicious granola bar you’ll ever make which requires NO baking! Vegan, gluten free, dairy free and refined sugar free, they are perfectly customisable- A great grab and go snack or breakfast!

Having to be on the go consiistently, I rely on snack bars to keep me going between working/studying/procrastination. Yes. Even procrastination takes a SUBSTANTIAL amount of energy. I decided to try and create a bar which would be full of healthy fats, natural sugars and whole grains.

I chucked a few dry ingredients in a bowl which I had on hand, and tested out a few liquid sweeteners to find one which would bind the bars well. I lucked out and and found a perfect ratio!

These bars being no bake, are so chewy, dense and flavourful. You will not miss the addition of sugar as the raisins, medjool dates  and brown rice syrup provides more enough sweetness and the nuts add the much desired crunch we all love in a bar. The coconut butter was a random (much appreciated) addition.

Chewy No Bake Granola Bars

A delicious, chewy no bake granola bar which is chock full of nuts, dried fruit, oats and very low in sugar- Vegan, gluten free and better than store bought!
Servings: 6

Ingredients  

Dry Ingredients

  • 120 grams 1 1/2 cups gluten free rolled oats
  • 1 cup of raisins
  • 1 cup roasted almonds chopped roughly
  • 2 medjool dates chopped roughly
  • 2 tablespoon dried berries of choice
  • 1/4 cup sesame seeds
  • Dash of sea salt
  • 1/2 tablespoon cinnamon

Wet ingredients

Instructions 

  • In a large mixing bowl, mix up the rolled oats, raisins, almonds, dates and dried berries. Add in the sesame seeds, sea salt and cinnamon. Set aside.
  • In a microwave proof bowl, mix the brown rice syrup and coconut oil until well combined. Drop the coconut oil in it and break apart as much as possible.
  • Heat in the microwave until melted (time depending on your microwave- for me it was 1.5 minutes)
  • Remove from microwave and pour the liquid over the dry mixture and ensure it is very well combined
  • Grease a cake tin/baking tray or line with parchment paper. Press the mixture into it and refrigerate immediately. Allow granola bars to set before cutting bars into 6 pieces.

Notes

These bars are easy to adapt to your preferences. Don't have almonds? Sub in some other nut. Hate coconut butter? Go slap yourself silly Sub in almond, peanut or another nut/seed butter. Change up the dried fruit or add something else in. Next time I make this, you can bet some chocolate chunks will be added in!
* These bars may be difficult to firm up at times- Try increasing the sticky syrup and/or coconut oil.

  1. These look great, Arman! You think honey would work fine in place of the brown rice syrup? I’m with you on homemade bars over packaged. Although a few are an exception, most of the bars available have ingredient list far too long for regular consumption!

    1. Thanks Khushboo! Honey will definitely work, but you’d probably need to add an extra 1/2 T of oil as the brown rice syrup is more liquid compared to honey!

    I've definitely had a recent recipe success, and it made me fall in love with no-bake goodies for sure, so these are right up my alley… aka, they look/sound delicious. I love making homemade granola bars because a) I'm allergic to a lot of the ones in the stores, and b) you can customize them to include anything you want.

  6. Pre-made always! Love the addition of coconut butter! I make a similar recipe but my mix-ins are pistachios and dried mango. It’s to-die for!!!

  7. I LOVE the idea of no bake desserts! It’s easy and I don’t have to turn on the oven to heat up the ENTIRE apartment.

    1. Tell me about it! Whenever I turn the oven on, it heats the whole place up- its good in Winter but summer…death.

  8. Okay I’m not sure I’ve actually made my own granola bars before… I might totally be spacing something out, but I think the closest thing has been no-bake energy bites… don’t hate me. But in attempt to redeem myself, I will try my best to make these sometime! (and maybe use honey for brown rice syrup because I don’t think I can find any around here) I need to make these, I need to make Amanda’s almond fudge… You know, I’m sure chemical reactions of some kind take place when making these (because when is chemistry not involved?! And yes, I know I’m a nerd 😉 ), so if I use organic ingredients, maybe I could make a case for how these count as o-chem homework?!?? 😛

    1. No bake energy bites are a great step 😛 If you use honey, add an extra 1/2 T of oil as the brown rice syrup is more liquid like! and seriously make Amanda’s fudge. I made another batch and 3/4 is gone! O-chem can jump in a (bunsen burner) lake.

  9. oohh these look so yummy!! i eat prepackaged bars more than i care to admit. at least once a day! sometimes its the healthy ones, sometimes, not so healthy. i need this recipe in my life because making my own would really be beneficial both health wise and financially. those little bars add up in more ways that one!

    1. Nothing wrong with prepackaged bars, I rely on them too when I’m in a time pinch, but when procrastination hits, these things happen 😉

  10. I like both homemade and storebought versions of everything. I guess it just depends on my mood, but there are definitely perks to both. #1 perk to homemade? Getting to taste deliciousness like warm granola bars straight out of the oven 🙂

    1. Well. That is if you bake them. Lol. Of course with these you would have to say “taste the deliciousness” straight out of the fridge 😉

  11. I’ve actually never made my own granola bars before, but they seem like the simplest things ever to make. Yours sound especially easy and I like that they don’t call for a ton of ingredients. Plus, I also love that you substitute whatever ingredients you have on hand.
