I think it’s safe to say, most families are divided when it comes to ice cream flavors. Of course, you ALWAYS have that one family member or relative who doesn’t like ice cream. We can pretend in this instance that they are adopted.

Growing up, I never really did have a favorite flavor. I’d always choose the “Neopolitan” tubs at the supermarket because I could have three different flavors, and also I was greedy. I never liked eating ice cream out of a cone. Instead, I’d always request my serving in a bowl and then begin to dance around it and make ice cream soup. I kid you not- I would literally mash it, spank it and poke it until the once firm ice cream would now resemble an ugly swap.

I was clearly the beautiful black sheep of the family, as the majority of them (except for Niki) went gaga over one flavor- Pralines and cream. I was always perplexed as why they liked that particular flavor. There were barely any nuts in it and when you DID find some, they were peanuts.

PEANUTS. 

Sorry, I need to vent for a second.

DEAR MAKERS OF MIXED NUTS. STOP LETTING THE PEANUTS STEAL THE THUNDER. GIVE THE PISTACHIOS, CASHEWS AND ALMONDS A CHANCE TOO. 

But seriously, finding the non-peanut in a jar of mixed nuts is like searching for a bloody unicorn. Impossible.

Pralines and cream was never my top ice cream choice. It only became one of my favorites after I visited Toronto in 2010 and tasted what I presume a REAL pralines and cream ice cream to taste like. This version was chock full of candied nuts (NO PEANUTS) and with a simple, creamy, vanilla base. I thought I had lucked out but after ordering at several other locations outside of Canada (Still in America), I realised that once again, Australia had failed me when it came to ice cream.

Australian pralines and cream = Vanilla ice cream and some peanuts and the hope of stumbling upon an almond.

Everywhere else- Vanilla ice cream with caramelized nuts and often without peanuts, and with a unicorn’s tail enrobed in it.

When it came to thinking up a delicious family favorite recipe to share as part of the #makeyourmove campaign with Kohl’s, I thought to involve ice cream. Well, my favorite ice cream flavor. I opted to create a delicious, healthy no bake protein packed snack bar which tasted like a pralines and cream ice cream.

Because traditional praline can be high in sugar and added fats, I used my sugar-free caramelized stovetop nuts recipe, which this non-stick pan is perfect for. The best part is the caramelized nuts only took 10 minutes so once cooled, I used it to make these epic No Bake Pralines and Cream Protein bars!

These healthy No Bake Pralines and Cream Protein Bars literally taste like dessert but are chock full of the good stuff to keep you satisfied. Chewy, doughy and creamy, these bars could be your healthy candy bar you enjoy BEFORE an actual candy bar. They pack a protein punch and are high in fiber, thanks to the coconut flour. I’d recommend blending them all up (I use this blender) for the perfect consistency! Naturally gluten free, vegan, paleo and refined sugar free too! 

HACK! I stick to this recipe for making my own dairy free white chocolate chips (I’ve tried 3-4 recipes, and this one holds up the best) and usually make one huge block and use a meat cleaver to hack them into chunks. So classy. For those without the ingredients or time, you can use standard white chocolate chips, however, they will alter the dietary compatibility.

Healthy No Bake Pralines and Cream Protein Bars

Just ten minutes is needed to make this delicious no bake Pralines and Cream protein bar recipe which taste like a pralines and cream ice cream bar, but so much healthier! These bars are refined sugar free, gluten free, vegan, dairy free and have a tested paleo option too! Much better than store bought and easy to make!

Ingredients  

  • 2 cups gluten free oat flour For the paleo option, use 1 cup coconut flour
  • ½ cup coconut flour sifted (Can sub for almond or more oat flour)
  • ½ cup vanilla vegan or paleo friendly protein powder
  • 2 tablespoon granulated sweetener of choice optional*
  • 1/4 cup sugar free caramelised nuts or any chopped nuts of choice
  • 2-3 tablespoon homemade white chocolate chunks divided
  • ½ cup unsalted almond butter can sub for any nut butter
  • ½ cup brown rice syrup sub for maple syrup in the paleo version
  • 1 tablespoon + dairy free milk of choice**

Instructions 

  • Line a large baking dish with greased paper and set aside.
  • In large mixing bowl bowl, combine the flour, protein powder, granulated sweetener and caramelised nuts and mix well.
  • In a microwave safe bowl, combine the nut butter and liquid sweetener and heat until melted. Pour the wet mixture into the dry and mix well- It should be crumbly.
  • Using a spoon, add the dairy free milk of choice one spoonful at a time until a thick, firm batter is formed. Stir in the white chocolate chunks.
  • Transfer to lined baking dish and press firmly. Top with more white chocolate chunks and refrigerate for at least 30 minutes.

Notes

* I omitted the sweetener as my vegan protein powder was sweetened
** Depending on the flour/protein powder combination, you may need more or less. I used up to 3/4 cup with the paleo version.
These bars can keep at room temperature, but best refrigerated and are freezer friendly.

  5. Oh man…I totally remember pralines and cream ice cream. It’s been so long! I used to mash it up until it looked like a milkshake in a bowl…haha! It used to make my Dad so angry. But it was worth it for that soft ice cream! Also, you should look for deluxe mixed nuts…that’s what they call them when the peanuts aren’t included. Yum!

  7. This is so true! I never understood the fuss about pralines and cream until I left Australia. Then OMG. Australia just doesn’t know how to make it properly!

  8. I can’t remember the last time I had pralines and cream! I don’t eat ice cream often, but I love cookies and cream the best, provided it has plenty of cookie pieces. Nothing annoys me more than ice cream that skimps on the good stuff. I’m also notorious for picking all of the good stuff out of the tub before Riley can get to it. He’s usually just stuck with vanilla ice cream if I get to it first.

  9. I love chocolate chip cookie dough ice cream or chocolate peanut butter. Tillamook makes my favorite Chocolate PB. I love Pralines and Cream with those candied nuts. I don’t understand Austalia’s version. You poor thing, growing up without a real version of it! These bars look awesome and you’ve done Pralines and Cream proud.

    1. ooooo Tillamook- I’ve heard of that brand and now need to hunt it down! Lol. Australia. Vanilla + anything like a single chocolate chip is considered exotic.

  10. No one here knows what a praline is! It’s traditionally a Southern thing, but coming from the ice cream making business, I happen to know a praline is a candy coated pecan. Boom.
    My favorite ice cream is one of two: vanilla soft serve with rainbow sprinkles or the one on the list with the most chocolate, peanut butter and chunks in it.
    I think my relationship with ice cream is normal, I eat it if it’s offered but don’t really go out to get it or buy it. I think there might be a pint in my freezer. I have yet to meet someone who refuses ice cream unless they are lactose intolerant.

  11. I could do with one of these right now…
    I don’t even think the world ‘praline’ is understood over in the UK… You may have a few folk who know it had something to do with nuts but that’s about it! I think that’s probably why I fell out of love with peanuts, they were everywhere! And mixed nuts were normally 80% peanuts aka the cheap nut and 20% tiny pieces of other nuts. My dad and I used to eat all the cashews out of everything and leave the rest… Those days he got to the bag before me were so sad! Haha!
