Healthy Chocolate Coconut Truffles Recipe

When it comes to the chocolate coconut combination, we’re clearly big fans of it. We’ve had chocolate coconut crack bars, homemade bounty bars and chocolate coconut no bake bars. It’s time for some truffle action to make its mark!

Vegan truffles and keto truffles both have ingredients in them which aren’t suitable for one diet or another.

That is why I made a fool-proof and easy truffle recipe which fits the bill- It’s both paleo and vegan, along with being suitable for those on a keto diet.

These healthy coconut truffles are the ultimate keto and vegan no bake dessert recipe. A delicious, coconut center covered in chocolate- What more could you want?

You only need FOUR ingredients to make these healthy chocolate coconut truffles-

  • Shredded unsweetened coconut
  • Almond flour
  • A sticky sweetener of choice
  • Chocolate of choice

That’s it!

SHREDDED COCONUT

The smaller your shredded coconut pieces are, the easier it will be to form into truffles or balls.

Using finely milled shredded coconut flakes (or desiccated coconut) will yield the best results.

If you don’t already have finely shredded coconut on hand, you can easily blend up your larger coconut flakes into a finer consistency.

Traditional shredded coconut flakes will work, but you’ll find that the texture will be a little different.

ALMOND FLOUR OR ALMOND MEAL

Almond flour pairs well with the coconut flakes to produce a chewy, soft and light flavor and texture. The almond flavor is not obvious, nor is it overpowering.

Using blanched almond flour is best, as it is light in flavor, color and easier to use, thanks to its super fine consistency.

Classic almond flour or even almond meal will work, but the texture will be denser and a little gritty- Albeit still delicious.

STICKY SWEETENER OF CHOICE

To keep these healthy truffles keto and vegan, as I used a monk fruit sweetened maple syrup. It’s keto-approved, low in carbs and 100% sugar-free.

If you don’t follow a keto lifestyle, you can substitute this for pure maple syrup, which is paleo and vegan-friendly, along with being a 100% refined sugar free.

KETO AND VEGAN CHOCOLATE

Keto chocolate chips and vegan/paleo chocolate chips can easily be found online or in many health food stores.

Personally, I prefer using store-bought chocolate chips as they are less time consuming and really quite affordable. They also taste great.

Keto diet followers can use Lily’s stevia-sweetened chocolate chips. Low in carbs, 100% sugar free and sweetened with stevia.

Paleo and vegan friends, I recommend Dairy Free Chocolate Chips or morsels. These paleo vegan chocolate chips are 100% naturally sweetened and taste great.

You can make your own chocolate coating, by melting a 100% chocolate bar and adding some liquid stevia drops to it, to provide sweetness.

A quick and easy 4-ingredient recipe for no bake paleo vegan chocolate coconut truffles! A smooth coconut filling covered in smooth chocolate, it’s a low carb and sugar free 5-minute dessert recipe! Keto, Dairy Free, Gluten Free.

Ingredients  

Instructions 

  • In a large mixing bowl, high-speed blender or food processor, combine all your ingredients, except your chocolate chips, and blend/pulse until a thick dough remains. If batter is too thick, add a little extra milk. 
  • Transfer the coconut mixture into a large mixing bowl. Using slightly wet hands, form 20 truffles and place on a lined plate or sheet. Once all the truffles are formed, place in the freezer.
  • Melt your chocolate chips of choice. Remove the coconut truffles from the freezer and using two forks, dip each truffle in the chocolate until evenly covered. Once all are covered in chocolate, refrigerate until firm.

* I used a monk fruit sweetened maple syrup. See post for other options
** For a thicker chocolate coating, use 2 cups.
