Peanut Butter lovers- This one is for you.

Alexis. This one is for you.

I actually had different content planned for this particular post. I spent the hours I was awake on my flight from Los Angeles to New York giggling to myself as I wrote a letter to Alexis’ parents. However, after an epic phone chat/preach session/motivational speech/comparison of accents- I wiped the original script and share with you this one today.

The blogging world is a funny one. When I first started out, I was in love with it for different reasons that I am today.

When I first started out, I was in love with the community aspect of it. The initial conversations you’d have with other bloggers more often than not ends in friendships. It felt weird admitting to myself that some of these people I’d never ever met face to face knew me better than some of my ‘in life’ friends.

Over time, I’ve noticed (and I know I’m not alone in this) that this ‘blogging community’ has it’s caveats which gets thrown in your direction with little notice. The longer I’ve blogged, the more apparent this has become. Those who were once with you at the beginning are like complete strangers, and you’d always be second guessing yourself before communicating with them again.

As sad as it is to look back over this, it’s a sad reality myself (and others) have had to face.

The last few months have been a huge learning curve for me in terms of myself as a blogger and my future endeavours. I’ve had to question many things and start looking at it in a different light, while staying true to my same beliefs and character. Speaking with Alexis put many things in perspective for me both as a person, a blogger and even a businessman.

No witty, quirky or humorous post in her honour today, but a genuine one from the heart.

Alexis, thank you for being the coconut palm sugar in a pool sprinkled with splenda.

So a confession as to this recipe in her honour- I made it twice and the first one we can dub…the visually unfortunate (yet delicious) no bake triple peanut butter bars. When I texted Alexis a picture of it, I was hoping she wouldn’t lose her appetite. Then again, she’s not one to ever lose her appetite so there.

I made it a second time to see if I could successfully vegan-ise it and it actually turned out way better looking than the original using packaged cookies. Win. Win. Kale. Kale. Hummus.

These Healthy No Bake Triple Peanut Butter Bars are so easy to whip up and are the perfect snack between meals or post dinner treat. The base uses mixture of peanut butter cookies, peanut butter, a tiny bit of crispy cereal of choice and a teeny bit of flour to help bind it all. The topping can be made two ways- Either melted peanut butter frosting or the cheat’s way of melted peanut butter chips.

For those whom are strictly vegan, instead of packaged peanut butter cookies, I made my grain free customisable cookies but subbed peanut butter for the cashew butter. These bars have a base like peanut butter fudge and while delicious at room temperature, are even better when refrigerated and thawed ever so slightly. Chewy, fudgy and full of peanut buttery goodness- You’re lucky it takes less than 20 minutes to whip up!

These healthy no bake triple peanut butter bars are the perfect treat or dessert for any peanut butter lover out there- This recipe comes with two versions, both gluten free and one is vegan- Quick, easy and ready in under 20 minutes!

Ingredients

For the peanut butter fudge base

  • 1 cup crushed peanut butter cookies measured after crushing
  • 1/4 cup crispy rice cereal of choice
  • 1 cup peanut butter
  • 2 tablespoon gluten free flour of choice
  • 3/4 cup gluten free oat bran
  • 1/4 – 1 cup dairy free milk of choice I used blue diamond almond breeze*

For the frosting

  • 1 package of peanut butter chips I used Trader Joe’s**

Instructions

  • Line a 9 x 9 baking tray with parchment paper/cookie sheet and set aside.
  • In a large mixing bowl, combine the crushed peanut butter cookies, crispy rice cereal, gluten free flour, gluten free oat bran and mix very well. Set aside.
  • In a microwave safe bowl, melt the peanut butter. Pour the peanut butter over the dry mixture and mix very well until fully incorporated.
  • If the mixture is crumbly, using a tablespoon at a time, add the milk of choice until a firm batter is formed. Once it is, pour batter in the lined baking tray. Set aside to cool (you can put it in the freezer if you wish)
  • Melt the peanut butter chips or make the vegan frosting linked below and top the peanut butter fudge base completely. Refrigerate or freeze immediately until firm. Once firm, cut into bars and enjoy!

Notes

* Only use the milk if mixture is still crumbly.

  1. What a lovely tribute <3 Good friends are worth so much!
When I am questioning myself how my blogging has changed I need to say that fisthand it changed me as a person. I can say that I am more comfortable with myself, doubt myself far less and I don't give a fuck anymore. And this again impacts my blogging. Now I just do it.

And all this also makes life definitely easier 😉 Self doubt is so dangerous. It paralyzes. It makes you react rather than act. But a little doubt is also healthy. It keeps our actions in check. Now I shut up before I get to philosophical 😛

    1. I’m so happy to hear that, Juli- It’s never worth it doubting yourself, especially when you’re a sass pot!

  2. I LOVE YOU MORE THAN ALLLL THE KALE AND ALLL THE HUMMUS AND ALL THE KALE HUMMUS. Your posts always make me literally laugh out loud and I look so forward to your genuine voice, your hilarious outlook on life, and your unique perspective. I can’t wait to meet you in person, which better happen #soonerratherthanlater. For realz. I can picture us spending the day in NYC frolicking around eating all the #paleo #glutenfree #vegan delicacies that that grand city has to fabulous food bloggers like ourselves.

I’m so touched that you wrote this post for me. It’s the first of it’s kind. Get used to my lovin’ cuz IT AIN’T GOIN NOWHERE. Love you to pieces, my peanut butter pickle.

    1. You are blogging gold- I mean it buddy! When we hang out, we’ll be eating diet jello and diet coke.

      Omg yum peanut butter pickle.

  3. HOLD THE PHONE. You did not make these specifically for my peanut butter loving face?! WHAT!?
I am going to pretend you did, because it makes me happier…and then I am going to eat ALL teh bars because peanut butter is my life. pinning!

  4. I think that you know that I am a person that holds my friends very close to my heart–and when I make a TRUE friend, as I’d like to think that we are becoming, I hold tight to them. Blogging has brought me some of my best friends in my life–Caitlin, Sarah, Erin, Sara, Erica– as well as some great people who are friends and are lovely to have in my life but are not absolutely permanent fixtures But I like to think that they would never think twice about coming over to say ‘hi,” you know? That it wasn’t just “part of the game” to them.
If I had some of these, I’m sure that might be different, lol.
I can’t wait to meet you!

    1. YES. Honestly. You have no idea what it means and your behaviour (through blogging) is pure indication of that whether you know it or not. when we hang out, I will continue to praise you, and not under the guise of some good meals.

      Okay, maybe.

  5. What a sweet post!! And I love the blogging community for so many reasons and the friendships I have created and continue to each day!
And these bars?! So obsessed as a peanut butter lover, what is not to be obsessed with?!

  6. Arman, I am glad you didn’t second guess yourself before communicating with me again – I like to think that the friends we make in the blogging world can be much like real life ones. There are some friends I talk to almost daily, and then others, I go for ages without talking to – but when we do catch up, it’s like no time has passed – everything is the same! Just cos there was silence didn’t mean that the other person wasn’t thought of….at least that’s my two cents! or tuppence!

Now – dude these bars! Phenomenal! I bet Alexis would be thrilled to indulge in these -in person! Heck – instead of me sending you a pkg – you could send me one – with these bars! 😉

    1. Oh my of course not- I just realised who was authentic VS who wasn’t and which community I wanted to be part of- A huge learning curve 🙂

Just wait until your birthday- You better let me know!

  7. I just wish it wouldn’t be like, 2800 calories and would be socially acceptable if I could just eat a jar of peanut butter straight every day. I guess this comes close enough…

  8. Um, wow, I don’t think these could possibly look any better than they do! And now I really want to read what you had originally planned! I am newer to blog land but have been surprised with how many awesome and genuine bloggers there are (you included of course!) and how you can find them somehow even as big as the blog world is.

    1. Hahaha you’ll have to wait until next year 😉

Thanks Michele- I admire you and your blog for so many reasons OUTSIDE of blogging which I honestly cant put into writing..but I shall in words 🙂

    1. Hey mate, I updated it to show- I used my flourless ones and also Udi’s soft baked peanut butter coconut ones 🙂

  9. oh how I LOVE peanut butter!! Ahh, this looks amazing Arman! & DEFINITELY CRUNCHY 🙂
xoxo Sarah Grace rel no follow link

  10. Sweetest.post.EVER. And so very true what you said about the blogging community. I’ve made some invaluable friendships that have stuck throughout the years, but there have also been a lot that ended up being completely superficial and dwindled into nothingness. Thankfully, the real ones more than make up for it <3

    1. I second that.

I’ve got nothing but great big heaping spoonfuls of love for both of you.

Also, I love this recipe. Bring on the peanut butter (Sorry Spoons, look away).

      1. We can make spoons a version of this with that peanut butter than doesn’t contain peanuts…(it’s so gross)

  11. I have only been blogging for a year and a half, but I was looking through some of my old comments the other day and I did realize that some of those people at the beginning are no longer there. I try and work on forming more valuable relationships these days so hopefully that won’t happen in the future.

THANK YOU for this PB creation. It is magical.

    1. YES. That is so true. It’s so hard to find real blogging friends and the sad thing is, it’s those who stick around through your successes who are the genuine ones!

Thanks for your kind words 🙂

  12. What a great post, mate! The blog world is indeed strange. You meet so many awesome people, but then those people fade away. But that’s kinda like friendships in real life, too. It’s not like everyone you meet becomes lifelong buds, ya know? Sometimes you meet people and think, hey that guy is cool. Turns out he’s a complete tool. But we just accept it and move on. Same thing in the blogosphere!

Alexis sounds like a pretty awesome person…if nothing else than for the fact that she called you her peanut butter pickle. I don’t even know what that means, but I just like the sound of it! I also like the sound of these peanut butter bars. I love me some creamy peanut buttery deliciousness…and I think these bars would be in serious danger around my kitchen!

    1. That’s true and a great correlation! LOL. I’m excited to meet you know and will pre plan my post to say what a tool you were. A spanner.

This is so random but I have tried peanut butter and pickles together- at the PBco sandwich shop….it wasn’t the worst 😉
