Where’s it a long weekend?
It’s a long weekend HERRRRRRRRRRRRRRRRRE!
I’m not going to lie- I’m excited that it’s the long weekend here, purely because I have brunch plans on Sunday and Monday. The downside of working for yourself is realising not everyone can dictate their hours. This is why when my friends have a day off outside of the weekend, I most definitely pencil in time with them!
Today’s theme is also pretty fitting- Pancakes!
Pancakes are infamous for being a weekend food and as most of the American population will have Monday off, it means you can make it Saturday, Sunday AND Monday. As always with these weekly round-ups, please feel free to add up to TWO of your recipes to match the theme! Speaking of themes, next week will be BLUEBERRIES! Get those berry recipes happening!

My weekend breakfasts might be the same but at least they feel different since I’m not rushing! And brunch plans on a Monday is plain awesome. What’s not is that my kids have off all week and we have no plans as of yet.
Oh no- That’s so odd, I didn’t know the east coast had it off this week!
Oh wow i made top 3 recipes again! So awesome…I love 3 day weekends and love going for brunch – especially when a good baked oatmeal is on the menu. Thanks for the link up!
Yep, people love your recipes! Congrats!
MORE PANCAKES. I’m going out to brunch this morning and I think you are swaying me in one direction…
Do itttttt!
Unfortunetly my blog is over-run by waffles, and not pancakes. Can you do a waffle round up? 😉
All of these sounds fabulous! I need to get back on the pancake train!
I like that idea! 🙂
This makes me want pancakes…but I already had breakfast…brunch?

I love pancakes and always neglect them, but this week has reminded me how easy they are, so I think I’ll be incorporating them into my life a little more! Enjoy your brunches – brunch is the best ❤️
🙂 Thanks Ellen!
Thank you for this post!! We love pancakes but are running out of ideas, and are tired of regular, plain gluten-free pancakes. We can’t wait to try these and find our favorites!
You are so welcome, Amanda! 🙂
Weekend breakfast/brunch includes potatoes! Almost every time.
Oh man, you’ve just sparked a craving!
Oh, how I miss the New York brunch scene! This is going to sound a bit strange, but the best brunch food I have ever had has actually been filipino brunch. There’s a few places in NYC that do it, but Maharlika in East Village is my fave. Fried eggs, garlic rice, and your choosing of sweet and savory delicious meats– out of this world.
Oh wow- That sounds absolutely delicious, Sheeva!
I completely forgot it was a three day weekend this week! I work from home Mon-Wed so I don’t bother paying attention to these things. But that’s nice that you get to enjoy some brunch time with frands! It will be good to get out and enjoy this beautiful California “winter” we’ve been having, right? Ha!
p.s. PANCAKES…yum. 🙂
Um… Sarah, you totally jinxed it. It’s pouring outside right now and cold.
WHY CALOFORNIA.
Ps- Come to LA 😀
I did jinx it! It’s pouring here right now too! 🙂
Btw, Julia and I are going to Expo West in Anaheim in March. It’s free for bloggers. You should come!!
I think I will be dreaming about cinnamon bun pancakes tonight.
And to be honest the whole post is torturing me. So many beautiful pictures! And so many fluffy pancake towers!
Omg. I have to send you a recipe.
OH SWEET CHEESES I love this round-up!! Pancakes are one of my favorite things to make on the weekends, and then I freeze them for the week. Can’t wait to dig into these 🙂
YES!!!! Omg. Go through my WIAW archives- I brought pancakes in baggies to university!
I’m legit craving a huge stack of pancakes now! FEED ME!!!!
Go fan yourself with parsley.
This is the round-up of my DREAMS. Making your low carb pancakes with a flax egg ASAP!!!
