Healthy Banana Bread Recipe

Oh the things you discuss or speculate when you have brunch. 

The other day, I was having enjoying a meal with a mate and we were playing the ‘what if‘ game and the question put forward was the cliche ‘What would you do if you won a million dollars?’ 

My mate pretty much answered a cliche answer- He’d buy a shoebox apartment and maybe furnish it with Ikea furniture. 

Good man.

Times have changed where a million bucks can only go so far.

Me?

Well, enter the randomness.

Easy Paleo Vegan Banana Bread

Long term readers know I’m the biggest fan of Harry Potter. I died a little inside when the final book came out, but that was because I went to a house party and someone gave me peppermint schnapps mixed with wine.

NOT COOL.

Okay, back to the topic.

I died a little inside (again) upon finishing the book. I seriously felt like part of me had ended. If I won a million dollars, I would hold a contest for anyone in the world to continue the Harry Potter novels and write a 9th book, 10th book, 11th book…you get the picture. This wouldn’t mean they would be published- It would be for me to (selfishly) continue the Harry Potter adventure. 

A big reason for this is perhaps my inability to start a new book. Once I finished the final Harry Potter book, I went back to the very first book and continued down the road of each book until I had finished them all again….and repeat.

So what does this have to do with today’s recipe?

Absolutely nothing. 

So there. 

Well, I guess now you know what I’d do with a million bucks, should I ever win such an amount. While this banana breakfast cake doesn’t cost a million bucks to make, it sure tastes like it could be worth that!

Banana Bread Without Oats and Flour

This healthy flourless banana breakfast cake is fluffy and light on the inside, tender on the outside and loaded with banana flavor! For a light and fluffy cake, it is extremely filling and perfect to enjoy for breakfast or even as a healthy snack or dessert! Unlike traditional banana cakes, this version contains no butter, oil, flour (unless you opt for the paleo version, in which it is grain free!) or sugar- Yet you’d never tell! This recipe is totally suitable for most dietary lifestyles out there- It’s gluten free, vegan, dairy free, sugar free and comes with a paleo option too! 

HACK! I usually opt for a ‘protein packed frosting’ on these breakfast cakes but for some reason, this worked better without it! However, my taste buds might differ from yours so if you’d like a bigger protein punch, use the frosting used in this recipe, using one of these tested protein powders!

The BEST healthy banana bread recipe made with almond flour and NO flour and no oats! Tender on the outside, moist and fluffy on the inside, this healthy banana breakfast bread is paleo, vegan, gluten-free and sugar free! 
Servings: 12 Slices
Prep: 5 mins
Cook: 33 mins
Total: 38 mins

Ingredients  

Instructions 

  • Preheat oven to 350F/180C. Grease a loaf pan or 10 x 10-inch square pan and set aside.
  • In a large mixing bowl, combine the dry ingredients and mix well.
  • In a separate bowl, melt your coconut oil. Add your mashed bananas and flax eggs/eggs and whisk together. 
  • Combine wet and dry mixture and mix until fully incorporated. Pour into the greased pan.
  • Bake for 40-50 minutes (square pan tends to be around the 40-minute mark, loaf pan 45-50 minute mark!), or until a toothpick comes out clean from the center. 
  • Let cool in the pan for 10 minutes, before transferring to a wire rack to cool completely. Slice and enjoy.

* Optional- Only add if you prefer a sweeter banana bread/breakfast cake
Healthy Flourless Banana Bread (Paleo, Vegan, Gluten-Free) should be kept refrigerated, for up to 3 days. It is also freezer friendly.

  1. I always re-read my favorite books! I am not a big fan of Harry Potter (sorry), but I love Vladimir Nabokov and read his books again and again. I am definitely reccomend him if you ever want something more “classic” 😉

    I am still not sure I would actually read a 9th book. That might be because it’s like warmed up food to me. Have I ever told you that I didn’t read the final book for over 1,5 years because I refused to let it end?

    For a million dollars I would pay my rent and buy plane tickets to everywhere. I would spend all money travelling and I wouldn’t come back until it was gone completely.

  3. I keep trying to buy enough bananas to have a couple left for baking with no such luck. I’m pathetic and always say if I ever won money I’d pay off debt and then give the rest back. Although you’re right in that 1m doesn’t really get you very far now!

  5. So I double checked the recipe to see if you made the chocolate chips “optional” again, but it turns out they’re not even on there!! Arman!
    As far as books go, I’m notorious for re-reading a series. I do the same with Netflix shows. I just can’t let go once I”m invested!

  8. If I had a million dollars I’d pay off my car loan, my student loans and then I’d move to Florida and save the rest. Really boring, but I’m a simple person. I’d probably donate some of it to MFA or fund a few kick starters too if I got bored.
    You know I’m a Harry Potter fan, so I’ve definitely reread them 🙂 I used to reread more books when I was younger.
